Peanut Butter and Jelly Banana Pancakes
Ingredients
- 1 medium ripe banana
- 1 1/4 cup non-dairy milk
- 2 tbsp peanut butter
- 1 tsp vanilla extract
- 1 cup whole wheat flour (or sun GF all purpose)
- 1 cup rolled oats
- 2 tbsp flaxseed meal
- 1 tbsp baking powder
Preparation
Combine all ingredients in a high-speed blender until smooth.
Pour 1/3 cup batter onto a greased or nonstick pan.
Cook on both sides until golden brown or until edges appear matte and bubbles form in the center.
Top pancakes with your favorite jam and fresh fruit.
