Pumpkin Spice Parfait

Ingredients

  • 1 cup of vegan milk;
  • 1 banana;
  • 4 medjool dates (sub for maple syrup);
  • 1/2 cup canned pumpkin;
  • 1 tsp pumpkin spice blend;
  • cinnamon to taste;
  • optional: turmeric, maca...
  • pinch pink sea salt;
  • 1/2 cup oats;
  • 2 tbsp chia seeds;

Preparation

  1. Blend everything except the oats and chia seeds

  2. Then mix with the oats, and chia seeds and split into two jars

  3. Refrigerate overnight

  4. Next morning serve with vegan yogurt and choose your toppings

  5. I topped with blueberries, pomegranate seeds and quinoa puffs
