Crispy Shredded Potato Fritters
Ingredients
- 4 medium potatoes
- 4 large eggs
- 2 green onions, chopped with greens
- 2 tablespoons flour
- 3 teaspoons salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon ground coriander
For frying
- Corn oil
Preparation
Peel the potatoes and grate them using a coarse vegetable grater.
Place the grated potatoes on a kitchen towel, wrap it well to remove all the liquid, and transfer to a deep bowl.
Add the eggs, chopped green onions, flour, salt, pepper, and coriander, and mix well.
Get a flat skillet and add a little corn oil to it.
Take a portion of the potato mixture, shape it into a disc with your hands, place it in the skillet, cook for a few minutes, flip to the other side, and cook until golden brown, then serve.
