Crispy Shredded Potato Fritters

Ingredients

  • 4 medium potatoes
  • 4 large eggs
  • 2 green onions, chopped with greens
  • 2 tablespoons flour
  • 3 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground coriander

For frying

  • Corn oil

Preparation

  1. Peel the potatoes and grate them using a coarse vegetable grater.

  2. Place the grated potatoes on a kitchen towel, wrap it well to remove all the liquid, and transfer to a deep bowl.

  3. Add the eggs, chopped green onions, flour, salt, pepper, and coriander, and mix well.

  4. Get a flat skillet and add a little corn oil to it.

  5. Take a portion of the potato mixture, shape it into a disc with your hands, place it in the skillet, cook for a few minutes, flip to the other side, and cook until golden brown, then serve.
