Fried Fish with Terasi Sambal

Ingredients

  • 500 grams mackerel
  • 2 tablespoons key lime juice
  • Salt to taste
  • Oil for frying

Sambal

  • 8 curly chilies
  • 5 red bird's eye chilies
  • 1 clove garlic
  • 2 shallots
  • 1 tablespoon roasted shrimp paste
  • Salt to taste
  • Sugar to taste

Preparation

  1. Clean the fish and mix with key lime juice and salt, then marinate for 1 hour in a covered container in the fridge.

  2. Heat the oil, then fry over medium heat until the fish is cooked. Remove and serve.

Sambal

  1. Fry all ingredients briefly except salt and sugar in hot oil, then remove and drain.

  2. Grind or pound them, add salt and sugar to taste. Grind until almost smooth and well mixed. You may add key lime juice if desired.
