Spicy Malaysian Black Pepper Chicken
Ingredients
- 5 pieces chicken
- 6 shallots, pounded
- 2 cloves garlic, pounded
- 1 inch ginger, sliced
- 1 teaspoon black pepper
- 2 tablespoons oyster sauce
- 4 tablespoons sweet soy sauce
- bird's eye chilies, optional
- 1/2 cup water
- 1 teaspoon cornstarch mixed with a little water
- salt to taste
- sugar to taste
- cooking oil
Marinade
- 2 tablespoons sweet soy sauce
- 2 tablespoons oyster sauce
- 1 teaspoon black pepper
Preparation
Marinate the chicken with the marinade ingredients for 30 minutes, then fry or grill until cooked.
In a pan, sauté the pounded shallots, pounded garlic, sliced ginger, and black pepper until fragrant.
Add the oyster sauce, sweet soy sauce, bird's eye chilies if using, and water, then bring to a simmer.
Add the cooked chicken and stir until well mixed.
Add salt and sugar to taste.
If desired, add the cornstarch mixture to thicken the sauce and serve.
