Spicy Malaysian Black Pepper Chicken

Ingredients

  • 5 pieces chicken
  • 6 shallots, pounded
  • 2 cloves garlic, pounded
  • 1 inch ginger, sliced
  • 1 teaspoon black pepper
  • 2 tablespoons oyster sauce
  • 4 tablespoons sweet soy sauce
  • bird's eye chilies, optional
  • 1/2 cup water
  • 1 teaspoon cornstarch mixed with a little water
  • salt to taste
  • sugar to taste
  • cooking oil

Marinade

  • 2 tablespoons sweet soy sauce
  • 2 tablespoons oyster sauce
  • 1 teaspoon black pepper

Preparation

  1. Marinate the chicken with the marinade ingredients for 30 minutes, then fry or grill until cooked.

  2. In a pan, sauté the pounded shallots, pounded garlic, sliced ginger, and black pepper until fragrant.

  3. Add the oyster sauce, sweet soy sauce, bird's eye chilies if using, and water, then bring to a simmer.

  4. Add the cooked chicken and stir until well mixed.

  5. Add salt and sugar to taste.

  6. If desired, add the cornstarch mixture to thicken the sauce and serve.
