Rainbow Chia Seed Fruit Bowl

Ingredients

  • Chia seeds 3 tbsp
  • Oats 3 tsp
  • Cashew cream 3 tsp
  • Vanilla extract 1/2 tsp
  • Coconut yogurt 3 tsp
  • Raw agave or maple syrup
  • Almond milk 1 cup
  • Soy milk 1/2 cup
  • Granola
  • Fresh kiwis
  • Fresh persimmon
  • Blueberries
  • Tamarillo sweet chutney (homemade)

Preparation

  1. Combine chia seeds, almond milk, soy milk, vanilla extract, and sweetener in a bowl and stir well

  2. Let the mixture sit for 15-20 minutes or refrigerate to thicken into a pudding-like consistency

  3. In a serving bowl, add oats, cashew cream, and coconut yogurt, then layer or mix with the chia pudding

  4. Top with granola and fresh fruits such as kiwis, persimmon, and blueberries, and add tamarillo sweet chutney
