Peanut Butter Jelly Cauliflower Oats

Ingredients

  • 250 ml coconut milk
  • 3 tablespoons frozen cauliflower rice
  • 2 teaspoons hemp seeds
  • some cinnamon
  • 1 tablespoon raisins
  • 3 tablespoons oats

Toppings

  • 2 handfuls frozen raspberries
  • 30 ml water
  • 1 teaspoon chia seeds
  • some cinnamon
  • 1 teaspoon maple syrup
  • peanut butter
  • @livias raw cookie dough nugglets
  • 1/2 banana
  • shredded coconut
  • some nuts
  • quinoa puffs
  • cacao nibs

Preparation

  1. In a saucepan, combine coconut milk, frozen cauliflower rice, hemp seeds, cinnamon, raisins, and oats. Cook over medium heat, stirring occasionally, until oats are soft and mixture is creamy

  2. For the raspberry topping: Place frozen raspberries in a saucepan and cook until they begin to break down. Add water, chia seeds, cinnamon, and maple syrup, then continue cooking until thickened.

  3. Serve the oat mixture in a bowl and top with the raspberry mixture, peanut butter, raw cookie dough nugglets, banana, shredded coconut, nuts, quinoa puffs, and cacao nibs
