Peanut Butter Jelly Cauliflower Oats
Ingredients
- 250 ml coconut milk
- 3 tablespoons frozen cauliflower rice
- 2 teaspoons hemp seeds
- some cinnamon
- 1 tablespoon raisins
- 3 tablespoons oats
Toppings
- 2 handfuls frozen raspberries
- 30 ml water
- 1 teaspoon chia seeds
- some cinnamon
- 1 teaspoon maple syrup
- peanut butter
- @livias raw cookie dough nugglets
- 1/2 banana
- shredded coconut
- some nuts
- quinoa puffs
- cacao nibs
Preparation
In a saucepan, combine coconut milk, frozen cauliflower rice, hemp seeds, cinnamon, raisins, and oats. Cook over medium heat, stirring occasionally, until oats are soft and mixture is creamy
For the raspberry topping: Place frozen raspberries in a saucepan and cook until they begin to break down. Add water, chia seeds, cinnamon, and maple syrup, then continue cooking until thickened.
Serve the oat mixture in a bowl and top with the raspberry mixture, peanut butter, raw cookie dough nugglets, banana, shredded coconut, nuts, quinoa puffs, and cacao nibs
