Vegan Apple Pockets for On-the-Go Snacking

Ingredients

  • 1 pck. Puff pastry
  • 3 apples
  • 2tb brown sugar
  • 2tb plantbased butter
  • 1 pinch of cinnamon
  • 1tb soy cream

Preparation

  1. Preheat the oven to 180 degrees two sided heat

  2. chop the apples in small cubes

  3. Add to a pot with plantbased butter and sugar

  4. Caramelize for about seven minutes

  5. Mix in the cinnamon

  6. Puree but not to smooth (leave chunks)

  7. Take from the stove and let it cool down

  8. Cut puff pastry in 6-8 rectangles

  9. Add the puree on top of the puff pastry

  10. Close the edges of the triangles with a fork

  11. Spread cream on top

  12. Add a couple of slits on the top of the pockets

  13. Bake for about twenty minutes
