Crispy Turkish Walnut Pastry
Ingredients
- 125 grams butter or margarine, at room temperature
- 1 tea glass vegetable oil
- 1 tea glass milk
- 1 tablespoon yogurt
- 2 tablespoons semolina
- 1.5 teaspoons baking soda
- As needed flour (approximately 3-3.5 cups)
Filling
- Small bowl chopped walnuts
Syrup
- 3 cups sugar
- 3.5 cups water
- 2-3 drops lemon juice
Preparation
First, prepare the syrup and let it cool; the syrup should be cold when poured over the hot pastry.
Boil sugar and water together while stirring, then add lemon juice and boil for five more minutes before removing from heat.
For the dough, mix all ingredients except flour, then gradually add flour to form a soft dough.
Shape the dough into walnut-sized pieces and press them using a mold or the back of a grater.
Place a small amount of walnuts in the center of each piece and seal it closed.
Arrange the pieces on a baking sheet and bake in a preheated 180-degree Celsius oven until golden brown.
After removing from the oven and allowing to cool slightly, pour the cooled syrup over the pastries.
Serve the pastries once they have absorbed the syrup.
Tips
For this and other syrup-based desserts, ensure the pastries are baked thoroughly to prevent sogginess; they should be cookie-like in texture to avoid becoming doughy when syrup is added.
