Homemade S’more Blondies with Marshmallows and Chocolate

Ingredients

  • 2 eggs (if vegan you can sub in flax eggs: 1 tbsp ground flax seed + 3 tbsp water = 1 egg)
  • 2/3 coconut sugar (or pure cane sugar)
  • 4 tbsp coconut oil
  • 4 tbsp almond butter
  • 1 tsp vanilla extract
  • 1 1/2 cups gluten free flour
  • 1 tsp baking soda
  • 2/3 cup vegan mini marshmallows
  • 2/3 cup dark chocolate chunks (I chopped up a @hukitchen salty dark chocolate bar)
  • dash of sea salt

Preparation

  1. Preheat oven to 350F and spray an 8x8 dish with coconut oil.

  2. In a small mixing bowl, add eggs, coconut sugar, coconut oil, almond butter, and vanilla extract; whisk with a fork until fully combined.

  3. In a separate bowl, mix together gluten free flour, baking soda, and sea salt.

  4. Incorporate the dry mixture into the wet mixture until it forms a moist dough.

  5. Fold in the mini marshmallows and chocolate chunks.

  6. Scrape the dough into the oven-safe dish.

  7. Bake for 20-25 minutes or until a toothpick comes out clean.
