Homemade S’more Blondies with Marshmallows and Chocolate
Ingredients
- 2 eggs (if vegan you can sub in flax eggs: 1 tbsp ground flax seed + 3 tbsp water = 1 egg)
- 2/3 coconut sugar (or pure cane sugar)
- 4 tbsp coconut oil
- 4 tbsp almond butter
- 1 tsp vanilla extract
- 1 1/2 cups gluten free flour
- 1 tsp baking soda
- 2/3 cup vegan mini marshmallows
- 2/3 cup dark chocolate chunks (I chopped up a @hukitchen salty dark chocolate bar)
- dash of sea salt
Preparation
Preheat oven to 350F and spray an 8x8 dish with coconut oil.
In a small mixing bowl, add eggs, coconut sugar, coconut oil, almond butter, and vanilla extract; whisk with a fork until fully combined.
In a separate bowl, mix together gluten free flour, baking soda, and sea salt.
Incorporate the dry mixture into the wet mixture until it forms a moist dough.
Fold in the mini marshmallows and chocolate chunks.
Scrape the dough into the oven-safe dish.
Bake for 20-25 minutes or until a toothpick comes out clean.
