Naturally Sweetened Homemade Granola Batch

Ingredients

  • 250g jumbo sized rolled oats
  • 25g pumpkin seeds
  • 100g mixed nuts (I use cashew, almond & pecan)
  • 35g coconut flakes
  • 50g raisins
  • 1-2 tbsp chia seeds
  • 3tbsp coconut oil, melted
  • 1-2 tbsp maple syrup

Preparation

  1. Pre-heat the oven to 160C.

  2. In a large bowl mix together all dry ingredients except for raisins & coconut flakes.

  3. Melt the coconut oil and then mix thoroughly with the honey.

  4. Pour over dry ingredients & give a good mix around so everything glistens.

  5. Line a baking tray with parchment paper & pour the mixture out onto it. Flatten & push down slightly so its all even.

  6. Bake in the oven for 15-18 minutes. Stirring halfway through to make sure nothing catches. After 11-12 mins sprinkle over the coconut flakes as they don’t need long to toast!

  7. Remove from oven and sprinkle over the raisins, leave to cool completely & then transfer to an air-tight container. Will keep for 2-3 weeks (but never lasts that long in my household ??)
