Chunky Maple Apple Pecan Granola

Ingredients

  • 250g jumbo rolled oats
  • 100g pecans
  • 1 tbsp flour
  • 1 heaped tbsp chia seeds
  • 1 tbsp cinnamon
  • 50g dried apple pieces
  • 3 tbsp coconut oil
  • 1-2 tbsp maple syrup

Preparation

  1. Pre-heat the oven to 160°C and line a tray with parchment.

  2. Mix all the dry ingredients, except for the apple slices, in a bowl.

  3. Separately, melt the coconut oil and then stir in the maple syrup.

  4. Pour wet over dry and mix well so that everything gets nicely covered.

  5. Pour mixture out onto baking tray and then add the apple slices and press down.

  6. Bake in the oven for 15-17 minutes; don’t stir for ultimate crunchiness.

  7. Leave to cool completely before breaking up into chunks.
