Soft Boiled Egg with Vegetable Lunch Bowl
Ingredients
- 1 egg
- 1/2 avocado
- asparagus
- sweet potato fries
- Brussels sprouts
- mushrooms
- tomato
- feta cheese
Preparation
Soft boil the egg by boiling for 7 minutes and then transferring to an ice bath.
Roast asparagus at 415°F for 15 minutes with Trader Joe's everyday seasoning.
Roast sweet potato fries at 400°F for 45 minutes.
Roast Brussels sprouts at 400°F for 40 minutes.
Sauté mushrooms until cooked.
Assemble the bowl with the soft boiled egg, avocado, roasted asparagus, roasted sweet potato fries, roasted Brussels sprouts, sautéed mushrooms, tomato, and feta cheese.
