Vegan Aubergine Rashers Bacon Alternative

Ingredients

  • 1 aubergine
  • 2 tbsp miso
  • 2 tbsp maple syrup
  • 1 tbsp soya sauce
  • 1 tbsp smoked paprika
  • 1 tbsp balsamic vinegar
  • 1/2 tbsp liquid smoke
  • 1 tsp garlic powder
  • 1/2 tsp onion powder

Preparation

  1. Mix all the glaze ingredients together in a small bowl.

  2. Slice the aubergine thinly on a mandolin or cut in half lengthways and slice with a vegetable peeler.

  3. Brush the glaze on both sides of each slice and lay on lined baking sheets.

  4. Bake at 160C for about 15 minutes until the edges are just starting to dry out. You can cook longer for crispy slices but prefer them juicy.

  5. Serve warm or cold.

Tips

  1. If you don’t have liquid smoke, get some and start with a small amount as brands vary in strength and adjust to taste.

  2. This version uses balsamic vinegar for added depth and sweetness; if unavailable, omit it but try it once as it enhances the flavor.
