Fried Grouper in Oyster Sauce

Ingredients

  • 1 whole grouper fish
  • Salt to taste
  • 2 garlic cloves
  • 1 shallot
  • 2 red chilies
  • 3 bird's eye chilies
  • 2 green onion stalks
  • 1 small onion
  • 3 tablespoons sweet soy sauce
  • 2 tablespoons oyster sauce
  • 1 cup water
  • Oil as needed

Preparation

  1. Coat the grouper with salt, then fry in hot oil until golden brown and drain.

  2. Heat oil, add shallots and garlic, and stir until golden brown.

  3. Add red chilies, bird's eye chilies, and onion, stir-fry briefly then add water, sweet soy sauce, oyster sauce, and the grouper.

  4. Let it simmer on low heat until the sauce is absorbed and the water reduces, then add green onions, stir briefly, and remove from heat.
