Indonesian Style Stir-Fried Clams

Ingredients

  • 300 g boiled clams
  • 1 smashed galangal slice
  • 1 smashed ginger slice
  • 1 bay leaf
  • 5 sliced red shallots
  • 3 sliced garlic cloves
  • 3 diagonally sliced green chilies
  • 2 diagonally sliced red chilies
  • sliced bird's eye chili to taste
  • handful of cempedak fruit
  • 2 small green tomatoes
  • water as needed
  • vegetable oil for stir-frying
  • salt to taste
  • mushroom stock to taste
  • oyster sauce to taste
  • sweet soy sauce to taste

Preparation

  1. Heat a little vegetable oil and stir-fry the shallots and garlic until fragrant. Add galangal, ginger, bay leaf, and chilies. Add clams and cempedak.

  2. Add water, other seasonings, sliced chilies, and tomatoes. Check the taste, cook until water reduces and flavors absorb. Remove from heat and serve.
