Indonesian Salted Squid Stir-Fry

Ingredients

  • 300g salted squid
  • 2 bay leaves
  • 1 piece galangal, smashed
  • 1 lemongrass stalk, smashed
  • 2 tbsp oyster sauce
  • 1 tbsp sweet soy sauce
  • A little water
  • Salt
  • Sugar

Sliced spices

  • 12 shallots
  • 6 garlic cloves
  • 15 green chilies
  • 10 bird's eye chilies, whole

Preparation

  1. Wash the salted squid thoroughly, then soak in hot water for 10 minutes, wash again. Fry the squid briefly then remove and drain.

  2. Stir-fry shallots and garlic until fragrant, then add the remaining ingredients, stir-fry until cooked. Add oyster sauce and a little water, salt and sugar, check taste.

  3. Add the salted squid and sweet soy sauce, stir well. Add whole bird's eye chilies, stir until spices are absorbed.
