Indonesian Salted Squid Stir-Fry
Ingredients
- 300g salted squid
- 2 bay leaves
- 1 piece galangal, smashed
- 1 lemongrass stalk, smashed
- 2 tbsp oyster sauce
- 1 tbsp sweet soy sauce
- A little water
- Salt
- Sugar
Sliced spices
- 12 shallots
- 6 garlic cloves
- 15 green chilies
- 10 bird's eye chilies, whole
Preparation
Wash the salted squid thoroughly, then soak in hot water for 10 minutes, wash again. Fry the squid briefly then remove and drain.
Stir-fry shallots and garlic until fragrant, then add the remaining ingredients, stir-fry until cooked. Add oyster sauce and a little water, salt and sugar, check taste.
Add the salted squid and sweet soy sauce, stir well. Add whole bird's eye chilies, stir until spices are absorbed.
