Fudgy Chickpea Bars
Ingredients
- fudgy chickpea bars
- 1/2 cup whole rolled oats
- 1/4 cup peanut butter
- 1/4 cup pure maple syrup
- 1/4 cup raisins
- 1/4 cup ground flax
- 1/4 cup sunflower seeds
- 1/4 cup unsweetened coconut flakes
Preparation
Line a 9x5 inch loaf pan with parchment or wax paper
In a food processor, blend up oats until they look like a coarse flour
Then add chickpeas, peanut butter and maple syrup
Blend until totally smooth
Then add raisins, flax, sunflower seeds, coconut flakes and salt
Blend until everything is combined
Using a rubber spatula, add mixture to loaf pan, making sure it’s evenly distributed and smooth
Cover with plastic wrap and place in the refrigerator for at least 4 hours
Once set, remove from pan, take off parchment or wax paper and slice into bars
Store in an air tight container in the refrigerator
