Fudgy Chickpea Bars

Ingredients

  • fudgy chickpea bars
  • 1/2 cup whole rolled oats
  • 1/4 cup peanut butter
  • 1/4 cup pure maple syrup
  • 1/4 cup raisins
  • 1/4 cup ground flax
  • 1/4 cup sunflower seeds
  • 1/4 cup unsweetened coconut flakes

Preparation

  1. Line a 9x5 inch loaf pan with parchment or wax paper

  2. In a food processor, blend up oats until they look like a coarse flour

  3. Then add chickpeas, peanut butter and maple syrup

  4. Blend until totally smooth

  5. Then add raisins, flax, sunflower seeds, coconut flakes and salt

  6. Blend until everything is combined

  7. Using a rubber spatula, add mixture to loaf pan, making sure it’s evenly distributed and smooth

  8. Cover with plastic wrap and place in the refrigerator for at least 4 hours

  9. Once set, remove from pan, take off parchment or wax paper and slice into bars

  10. Store in an air tight container in the refrigerator
