Malaysian Sweet Creamy Apam Pancake

Ingredients

  • 2 cups rice flour
  • 1-2 tablespoons dry yeast
  • 3 tablespoons sugar
  • A pinch of salt
  • 3/4 cup warm water
  • 1 egg
  • 1/2 cup thick coconut milk or fresh milk

Preparation

  1. Mix rice flour, dry yeast, sugar, salt, and warm water together, cover, and let rest for 30 minutes.

  2. Add 1 egg and 1/2 cup thick coconut milk or fresh milk, then stir until smooth.

  3. Heat a pan and lightly oil it, preferably using a tissue on a non-stick pan.

  4. Pour one ladle of batter into the pan and shake the pan.

  5. Cover with a lid for about 3 minutes, ensuring not to overcook to avoid burning.

  6. Once cooked, roll it up and serve.

Tips

  1. No need to proof the yeast before mixing.

  2. Using a non-stick pan is recommended for better results.
