Malaysian Sweet Creamy Apam Pancake
Ingredients
- 2 cups rice flour
- 1-2 tablespoons dry yeast
- 3 tablespoons sugar
- A pinch of salt
- 3/4 cup warm water
- 1 egg
- 1/2 cup thick coconut milk or fresh milk
Preparation
Mix rice flour, dry yeast, sugar, salt, and warm water together, cover, and let rest for 30 minutes.
Add 1 egg and 1/2 cup thick coconut milk or fresh milk, then stir until smooth.
Heat a pan and lightly oil it, preferably using a tissue on a non-stick pan.
Pour one ladle of batter into the pan and shake the pan.
Cover with a lid for about 3 minutes, ensuring not to overcook to avoid burning.
Once cooked, roll it up and serve.
Tips
No need to proof the yeast before mixing.
Using a non-stick pan is recommended for better results.
