Stir-Fried Fern Tips with Clam Sambal
Ingredients
- 1 bunch fern tips
- 200 grams clams
- 1 tablespoon white vinegar
Spice mix
- 6 shallots
- 2 garlic cloves
- 1 teaspoon grilled shrimp paste chili
- 1/2 tomato
- juice of 2 key limes
- 1 tablespoon sugar
- salt and seasoning to taste
Preparation
Wash the clams thoroughly, scrub the shells, boil water with 1 tablespoon white vinegar, add clams and cook for 30 seconds, then remove and extract the meat, set aside
Clean the fern tips, pick the leaves, and soak in water first, set aside
Heat oil in a pan, sauté the ground spice mixture until fragrant, add the fern tips and stir-fry briefly, check and adjust seasoning
Add the clams, stir well, and remove from heat, ready to serve
