Stir-Fried Indonesian Beef Ribs

Ingredients

  • 500 grams beef ribs
  • 2 bay leaves
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • Water as needed
  • 3 cherry tomatoes

Seasoning

  • 3 cloves garlic (sliced thinly)
  • 3 shallots (sliced thinly)
  • 1 piece ginger (sliced thinly)
  • 4 chilies (sliced thinly)
  • 2 bay leaves
  • 2 kaffir lime leaves
  • 1 tablespoon sugar
  • 1 tablespoon sweet soy sauce
  • 1/2 teaspoon salt
  • A pinch of pepper
  • 100 mL water
  • 2 tablespoons cooking oil

Preparation

  1. Boil water and cook the beef ribs with bay leaves, salt, and pepper until tender.

  2. Drain the ribs, cut them to your liking, and set aside.

  3. Heat oil and sauté garlic, shallots, ginger, chilies, bay leaves, and kaffir lime leaves.

  4. Add the ribs and the remaining seasonings, stir evenly.

  5. Cook until the sauce reduces.

  6. Serve warm with cherry tomato slices.
