Dried Snakehead Fish in Balado Sauce
Ingredients
- 400 g dried salted snakehead fish
- Warm water for soaking
- Cooking oil as needed
- 2 bay leaves
- 50 ml water
- 5 stalks green onion
Spice paste
- 6 shallots
- 3 cloves garlic
- 10 curly red chilies
- 2 large red chilies (seeded)
- 1 tomato
- 1/2 tsp fried shrimp paste
- 1/2 tsp salt
- 2 tbsp sugar
Preparation
Soak the dried snakehead fish in warm water for 20 minutes. Remove and cut into pieces. Fry in hot oil until cooked and golden brown. Remove and set aside.
Heat 3 tablespoons of the oil used for frying the fish. Sauté the ground spices with bay leaves until fragrant and cooked. Add water and cook until boiling.
Add the fried snakehead fish and stir briefly. Add the green onion and stir until well mixed. Cook until the water evaporates. Remove from heat.
