Sweet and Sour Chickpea Nourish Bowl
Ingredients
Sweet and sour chickpeas
- 1 tbsp olive oil
- 1/2 large red onion, diced
- 2 cloves garlic, minced
- 1 can chickpeas, drained and rinsed
- 2 tbsp tamari
- 2 tbsp rice vinegar
- 1 tbsp tomato paste
- 1 tbsp maple syrup
- 2 tbsp water
- 1 tbsp cornstarch
Bowl components
- Cooked rice
- Avocado
- Zucchini
- Tomatoes
- Cucumber
- Hummus
- Sesame seeds
- Chilli flakes
Preparation
Sweet and sour chickpeas
Heat the olive oil in a large pan over medium heat, then add the onion and garlic
Cook for 2-3 minutes, until softened
Add the chickpeas, tamari, rice vinegar, tomato paste, maple syrup, water and cornstarch
Cook for around 5 minutes, until the sauce thickens
Bowl assembly
Place cooked rice in a bowl
Top with the sweet and sour chickpeas, avocado, zucchini, tomatoes, and cucumber
Add a dollop of hummus
Sprinkle with sesame seeds and chilli flakes
Tips
This lunch takes around 15 minutes to put together
