Sweet and Sour Chickpea Nourish Bowl

Ingredients

Sweet and sour chickpeas

  • 1 tbsp olive oil
  • 1/2 large red onion, diced
  • 2 cloves garlic, minced
  • 1 can chickpeas, drained and rinsed
  • 2 tbsp tamari
  • 2 tbsp rice vinegar
  • 1 tbsp tomato paste
  • 1 tbsp maple syrup
  • 2 tbsp water
  • 1 tbsp cornstarch

Bowl components

  • Cooked rice
  • Avocado
  • Zucchini
  • Tomatoes
  • Cucumber
  • Hummus
  • Sesame seeds
  • Chilli flakes

Preparation

Sweet and sour chickpeas

  1. Heat the olive oil in a large pan over medium heat, then add the onion and garlic

  2. Cook for 2-3 minutes, until softened

  3. Add the chickpeas, tamari, rice vinegar, tomato paste, maple syrup, water and cornstarch

  4. Cook for around 5 minutes, until the sauce thickens

Bowl assembly

  1. Place cooked rice in a bowl

  2. Top with the sweet and sour chickpeas, avocado, zucchini, tomatoes, and cucumber

  3. Add a dollop of hummus

  4. Sprinkle with sesame seeds and chilli flakes

Tips

  1. This lunch takes around 15 minutes to put together
