Vegan Cinnamon French Toast Bites

Ingredients

  • 3 packed cups of sourdough bread (cut into 1" cubes)
  • 2 flax eggs (2 tbsp ground flax seed + 6 tbsp water)
  • 2 tbsp nut milk
  • 1/4 tsp nutmeg
  • pinch of salt
  • 1 tsp cinnamon
  • 2 tbsp coconut sugar
  • 2 tbsp coconut oil

Preparation

  1. Prepare flax eggs by mixing 2 tbsp ground flax seed with 6 tbsp water and let sit for 5-10 minutes to thicken

  2. In a bowl, combine the flax egg mixture with 2 tbsp nut milk, 1/4 tsp nutmeg, pinch of salt, 1 tsp cinnamon, and 2 tbsp coconut sugar to make the batter

  3. Cut 3 packed cups of sourdough bread into 1-inch cubes if not already done

  4. Heat 2 tbsp coconut oil in a skillet over medium heat

  5. Dip the bread cubes into the batter, ensuring they are evenly coated

  6. Fry the coated bread cubes in the hot oil until golden brown on all sides, about 2-3 minutes per side

  7. Serve the French toast bites dipped in pure maple syrup.
