Mushroom and Smoked Cheese Omelette

Ingredients

  • 3 medium eggs
  • Splash of milk
  • Sea salt
  • Spreadable butter
  • Grated smoked cheddar
  • Button mushrooms
  • Chilli and garlic sauce
  • Chives
  • Smoked paprika flakes

Preparation

  1. Whisk together the eggs, milk, and sea salt.

  2. Slice the button mushrooms and fry them until cooked.

  3. Heat an omelette pan and add spreadable butter.

  4. Pour in the egg mixture and use a spatula to create folds and ribbons.

  5. Cover with a lid and reduce the heat, or if no lid, place under the grill.

  6. Add the fried mushrooms and grated smoked cheddar on top.

  7. Fold the omelette over and cook until the cheese melts.

  8. Slide onto a plate and top with chilli and garlic sauce, chives, and smoked paprika flakes.
