Basic Yeast Dough for Baked Savory Pastries
Ingredients
- 500 ml warm milk
- 1.5 kg wheat flour, approximately
- 300 ml oil
- 3 egg whites
- 5 tablespoons sugar
- 1 tablespoon salt, not too full
- 100 g fresh yeast
Filling options
- Ground meat
- Chicken
- Cheese and ham
For brushing
- 3 egg yolks
Preparation
Put warm milk in a bowl and dissolve the yeast
Add egg whites, sugar, salt, and oil
Cover well and wait until a foam forms like detergent foam
After the foam forms, mix everything with a wooden spoon, gradually adding flour until the dough is ready to knead; do not add too much flour to avoid dryness, and if it happens, add a bit more oil
Knead the dough, then let it rest covered with plastic wrap and a kitchen towel for 30 minutes
Divide the dough into pieces and form 30 small balls
Roll each ball into a round shape and add the filling of your choice
Brush the pastries with egg yolk
Bake until lightly golden
