Hummus Toast with Shiitake Bacon

Ingredients

  • Shiitake mushrooms
  • Olive oil or coconut oil
  • Liquid smoke (optional)
  • Sea salt
  • Maple syrup
  • Smoked paprika
  • Bread
  • Hummus
  • Chopped herbs
  • Black pepper

Preparation

  1. Preheat oven to 350°F.

  2. De-stem and thinly slice fresh shiitake mushrooms.

  3. Coat the mushrooms with olive or coconut oil and add liquid smoke (optional), sea salt, a drizzle of maple syrup, and smoked paprika.

  4. Bake the mushrooms on a baking tray lined with parchment paper for 30-40 minutes.

  5. Toast bread slices

  6. Spread hummus on the toasted bread

  7. Top with shiitake bacon, chopped herbs, and freshly ground pepper
