Hummus Toast with Shiitake Bacon
Ingredients
- Shiitake mushrooms
- Olive oil or coconut oil
- Liquid smoke (optional)
- Sea salt
- Maple syrup
- Smoked paprika
- Bread
- Hummus
- Chopped herbs
- Black pepper
Preparation
Preheat oven to 350°F.
De-stem and thinly slice fresh shiitake mushrooms.
Coat the mushrooms with olive or coconut oil and add liquid smoke (optional), sea salt, a drizzle of maple syrup, and smoked paprika.
Bake the mushrooms on a baking tray lined with parchment paper for 30-40 minutes.
Toast bread slices
Spread hummus on the toasted bread
Top with shiitake bacon, chopped herbs, and freshly ground pepper
