Indonesian Fried Chicken Meatballs

Ingredients

  • 300 grams ground chicken (including skin and fat)
  • 2 eggs
  • 150 grams sago flour
  • 50 grams wheat flour
  • 5 cloves garlic, crushed
  • 1 tablespoon fried shallots, crushed
  • 1 tablespoon sesame oil
  • 1 tablespoon chicken bouillon powder
  • 1/2 teaspoon ground pepper
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon double-acting baking powder
  • 1/2 tablespoon granulated sugar
  • Salt to taste

Preparation

  1. Mix all ingredients together until well combined.

  2. Shape the dough with your hand and a spoon to form meatballs, then fry in medium-hot oil over low heat until completely dry, about 20-25 minutes, stirring occasionally.

  3. Fry until very dry to prevent the meatballs from deflating when lifted, then remove and drain.

Notes

  1. This recipe yields approximately 18-20 meatballs.
