Indonesian Fried Chicken Meatballs
Ingredients
- 300 grams ground chicken (including skin and fat)
- 2 eggs
- 150 grams sago flour
- 50 grams wheat flour
- 5 cloves garlic, crushed
- 1 tablespoon fried shallots, crushed
- 1 tablespoon sesame oil
- 1 tablespoon chicken bouillon powder
- 1/2 teaspoon ground pepper
- 1/2 teaspoon baking soda
- 1/2 teaspoon double-acting baking powder
- 1/2 tablespoon granulated sugar
- Salt to taste
Preparation
Mix all ingredients together until well combined.
Shape the dough with your hand and a spoon to form meatballs, then fry in medium-hot oil over low heat until completely dry, about 20-25 minutes, stirring occasionally.
Fry until very dry to prevent the meatballs from deflating when lifted, then remove and drain.
Notes
This recipe yields approximately 18-20 meatballs.
