Traditional Indonesian Egg Martabak
Ingredients
Wrapper
- 100 g all-purpose flour
- 2 tbsp sago flour
- a pinch of salt
- 1 egg
- 250-280 ml water
- 1 tbsp cooking oil
Meat filling
- 300 g ground beef
- 3 cloves garlic, minced
- 1 onion, coarsely chopped
- 1-2 tsp curry powder
- salt
- mushroom stock
- ground pepper
- a little sugar
Egg mixture
- 3-4 duck or chicken eggs
- 3 stalks green onions, sliced
- a little salt
Preparation
Sauté garlic until fragrant, add minced beef and cook until it changes color, add salt, mushroom stock, ground pepper, a little sugar, and curry powder, check the taste, finally add onion, stir briefly, remove and set aside.
Mix all wrapper ingredients together until smooth, strain, heat a non-stick pan, take about one tablespoon of batter to make thin pancakes, repeat until all batter is used (makes about 8 wrappers).
Beat the eggs with a little salt, add the filling and green onions, take about 2 tablespoons of the mixture, place it in a wrapper, fold like an envelope, fry until golden brown, remove and serve with cucumber and carrot pickles.
Notes
Typically, store-bought lumpia wrappers are used for convenience, but making your own provides a crispier texture with abundant filling.
