Protein-Packed Pumpkin Breakfast Oatmeal
Ingredients
- 1 1/4 cup oat milk
- 1/2 cup oats
- 1/4 cup pumpkin puree
- Handful of tofu (about 1/4 cup or so)
- 1 scoop vital proteins collagen or protein powder
- 1 tbs chia seeds
- 1 tbs maple syrup
- 1 tbs pumpkin spice or 1 tbs cinnamon and 1/4 tsp nutmeg
- dash of salt
Preparation
In a small pot, add in your liquid and oats.
Then add in pumpkin and tofu and mix.
Use the back of a spoon to mash the tofu into smaller bits to blend in.
Add in the rest of your ingredients and simmer on low heat for about a minute.
Pour into a bowl and top with your favorite fruits and nuts.
