Protein-Packed Pumpkin Breakfast Oatmeal

Ingredients

  • 1 1/4 cup oat milk
  • 1/2 cup oats
  • 1/4 cup pumpkin puree
  • Handful of tofu (about 1/4 cup or so)
  • 1 scoop vital proteins collagen or protein powder
  • 1 tbs chia seeds
  • 1 tbs maple syrup
  • 1 tbs pumpkin spice or 1 tbs cinnamon and 1/4 tsp nutmeg
  • dash of salt

Preparation

  1. In a small pot, add in your liquid and oats.

  2. Then add in pumpkin and tofu and mix.

  3. Use the back of a spoon to mash the tofu into smaller bits to blend in.

  4. Add in the rest of your ingredients and simmer on low heat for about a minute.

  5. Pour into a bowl and top with your favorite fruits and nuts.
