Brazilian Cassava Cake with Coconut Sauce

Ingredients

  • 2 1/2 cups sugar
  • 1 small bottle coconut milk
  • 1 kg cassava, peeled and grated
  • 150 grams butter
  • 2 eggs
  • a pinch of salt

Sauce

  • 1/2 small bottle coconut milk
  • 4 tablespoons sugar

Preparation

  1. Preheat oven to 200Β°C and grease a bundt pan with butter and flour

  2. Beat butter and sugar until creamy

  3. Add eggs and continue beating

  4. Add coconut milk, then cassava and salt, and mix well

  5. Pour the batter into the prepared pan

  6. Bake for 40 minutes

  7. Mix coconut milk and sugar to make the sauce

  8. Pour the sauce over the cake

  9. Return to oven and bake until golden brown

  10. Remove from oven and let cool before unmolding

Tips

  1. If grating cassava finely, squeeze to remove some starch (I grated it coarsely)
