Moist Orange Cake with Orange Syrup

Ingredients

  • 1 cup orange juice
  • 1 (200ml) carton heavy cream
  • 3 eggs
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 tablespoon baking powder

Syrup

  • juice of 2 oranges
  • 1 cup granulated sugar

Preparation

  1. In a blender, beat heavy cream, orange juice, and egg yolks for 5 minutes

  2. Beat egg whites until stiff peaks form and set aside

  3. In a bowl, mix the sifted all-purpose flour, granulated sugar, and baking powder

  4. Gradually add the blender mixture to the dry ingredients and mix well

  5. Gently fold in the beaten egg whites

  6. Bake in a preheated oven at 180Β°C (350Β°F) for about 40 minutes

Syrup

  1. Mix orange juice and sugar in a saucepan

  2. Bring to a boil over medium heat, then boil for 2 minutes and remove from heat

  3. While the cake is still hot, poke holes all over with a fork and pour the syrup over the top
