Spinach and Oat Banana Donuts
Ingredients
- 1.5 packed cups baby spinach
- 1 ripe banana
- 2 large eggs
- 3 tablespoons rolled oats
- 1/4-1/2 teaspoon of cinnamon
- 1 tablespoon ground flaxseed
Preparation
Directions
Preheat the oven to 350 degrees. Grease a regular donut tin.
Add all of the ingredients into a blender and process until smooth.
Pour the batter into the donut cavities (or muffins) and bake for 17 minutes (23 minutes if making muffins) or until the donuts or muffins are firm and browning on the edges.
Pop out of the cavities and enjoy.
Tips
Total preparation time is 25-30 minutes from start to finish.
These can be made with other vegetables like beets, carrots, or butternut squash.
Cleanup is minimal, requiring only a blender and an oven.
Great for getting kids to eat veggies, and they work well as muffins too.
