Indonesian Ayam Palekko Chicken
Ingredients
- 1 whole rooster or village chicken, cut into small pieces
- 300 ml water
- 500 ml water and tamarind as needed for soaking
- Salt to taste
- Stock powder to taste
- Chicken skin as needed
Spice mix
- 5 shallots
- 25 bird's eye chilies
- 1/2 teaspoon ground pepper
Preparation
Wash the chicken thoroughly, mash the tamarind and mix with water for soaking, add salt to taste, and let marinate for 1 hour.
Fry the chicken skin in a pan over low heat until crispy.
Remove the chicken skin, then add the ground spice mix and fry until fragrant.
Add the chicken and stir until it changes color.
Pour in 300 ml of the tamarind soaking liquid, add salt and stock powder to taste.
Cook until the liquid reduces, stirring continuously.
