Chia Pudding with Coconut Yogurt and Raspberries

Ingredients

  • 3 tbsp chia seeds
  • 1 cup soy milk
  • 1 tsp raw agave
  • 1/2 tsp vanilla extract
  • 3 tbsp coconut yogurt
  • Handful of raspberries

Optional additions

  • Thick creamy yogurt (for non-vegan version)
  • Granola for extra crunch
  • Fruits of your choice

Preparation

  1. Mix chia seeds in soy milk with raw agave and vanilla extract, stirring continuously until it becomes fluffy in texture

  2. Refrigerate the mixture overnight to allow it to set

  3. Next morning, layer it in a jar with coconut yogurt

Variations

  1. If not vegan, use thick creamy yogurt instead

  2. Add granola or other fruits for extra crunch
