Healthy Vegan Pecan Banana Bread

Ingredients

  • 2.5 cups or 240 g rolled oats
  • 1/3 cup or 70 g chopped dates
  • 3 medium bananas (about 280 g)
  • 3 tbsp vegan yogurt
  • 1 tbsp baking powder
  • 2 tbsp chia seeds
  • 1/4 cup or 60 ml plant milk
  • 1 handful pecans
  • 1 tsp cinnamon

Preparation

  1. Preheat the oven to 180°C

  2. Blend the rolled oats in a food processor until they resemble flour

  3. In a large bowl, mix the blended oats, chopped dates, baking powder, chia seeds, cinnamon, and pecans

  4. In another bowl, mash the bananas and stir in the vegan yogurt and plant milk

  5. Combine the wet and dry mixtures until well blended

  6. Pour the batter into a greased loaf pan

  7. Bake for 45-60 minutes or until a toothpick inserted comes out clean

  8. Allow the bread to cool before slicing and serving
