Carrot and Walnut Cake
Ingredients
- 3 eggs (room temperature)
- 1 cup milk (room temperature)
- 3/4 cup vegetable oil
- 2.5 cups flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1 packet vanilla sugar
- 1 teaspoon cinnamon
- 1 teaspoon allspice
- 2 carrots
- 1 cup walnuts
Preparation
Beat the eggs and sugar for about 5-6 minutes.
Add milk and oil, and continue beating.
Sift in the flour, baking powder, and vanilla.
Add the spices, walnuts, and grated carrots after grating and squeezing out the juice, then mix with a spatula.
Pour the batter into a greased cake mold.
Bake in a preheated oven at 170 degrees Celsius with top and bottom heat.
Bake for about 20 minutes at 170 degrees, then increase to 180 degrees and bake until a toothpick comes out clean.
