Turkish Soda Borek with Cheese
Ingredients
- 8 sheets phyllo dough
- 1 bottle soda water
Sauce
- 3 eggs (one yolk reserved for top)
- 1 cup milk
- 1 cup vegetable oil
Filling
- 300g white cheese
- 200g lor cheese
- Half bunch parsley
Topping
- Egg yolk
- Sesame seeds
Preparation
First, prepare the sauce by mixing the eggs (with one yolk reserved for the top), milk, and vegetable oil in a deep bowl using a whisk.
Line a baking tray with parchment paper and place one phyllo sheet so that it hangs over the edges.
Brush the phyllo with a few spoonfuls of the sauce, ensuring it covers the entire surface.
Divide the second phyllo sheet into two pieces and place them randomly in the tray.
Brush with sauce again and spread it evenly.
Divide the third phyllo sheet into two pieces, place them randomly in the tray, and brush with a couple of spoonfuls of sauce.
Spread half of the cheese and parsley filling evenly over the phyllo.
Place the fourth, fifth, and sixth phyllo sheets in the same manner, brushing sauce between each layer.
After placing the sixth phyllo sheet, spread the remaining cheese filling evenly.
Place the seventh phyllo sheet on top and brush with sauce.
Fold the hanging edges over the top and brush the edges with sauce.
Place the eighth phyllo sheet on top and pour the remaining sauce over it.
Cut the borek into desired pieces.
Pour the soda water over the borek evenly and let it rest for 1 hour to absorb the sauce.
Brush the top with the reserved egg yolk, sprinkle with sesame seeds, and bake in a preheated 180°C oven for about 40 minutes until golden.
The borek is ready to serve.
