Vegan Cactus Tacos with Sauteed Vegetables
Ingredients
- 2 cactus pads
- 1/2 red bell pepper
- 1/2 orange bell pepper
- 1/2 green bell pepper
- 1/4 red onion
- salt
- pepper
- cumin
- oregano
- paprika
- cayenne pepper
- garlic
- 1 avocado
- lime juice
- cilantro
- tortillas
- homemade salsa
Preparation
Saute the cactus pads, bell peppers, and onion with seasonings including salt, pepper, cumin, oregano, paprika, cayenne pepper, and garlic.
Prepare guacamole by mashing the avocado and mixing with lime juice, cilantro, and salt.
Assemble the tacos using your favorite tortillas and homemade salsa.
Garnish with additional cilantro and lime juice.
