Banana Snickerdoodle Granola Clusters

Ingredients

  • 3/4 cup oats
  • 1/4 cup raw quinoa
  • 1 mashed banana
  • 2 tbsp nut butter
  • 1 tbsp cinnamon
  • 1/2 tbsp nutmeg
  • Chopped pecans
  • Sunflower seeds
  • Pinch of salt

Optional

  • leftover nut pulp from making nut milk

Preparation

  1. Mix dry ingredients in a bowl.

  2. Mix wet ingredients in another bowl and pour over the dry ingredients, ensuring everything is well coated.

  3. Spread mixture on parchment paper in an oven tray.

  4. Bake in the oven at 170° for about 20 min, mixing granola half-way through (but if you want big clusters take care not to break it apart too much).

  5. Take it out of the oven when golden and let it cool down for about 30 min without moving it (this makes it become all crispy!).

  6. Break it in chunks and store!
