Flourless Blueberry Oat Muffins

Ingredients

  • 2 ripe bananas
  • 1 cup Greek yogurt
  • 2 eggs
  • 1/3 cup maple syrup
  • 2 tbsp olive oil
  • 2 cups oats (gluten-free)
  • 1/2 tsp baking soda
  • 1.5 tsp baking powder
  • sprinkle of sea salt
  • blueberries

Preparation

  1. Combine all ingredients except blueberries in a blender.

  2. Evenly divide the mixture into a greased muffin tin.

  3. Top with blueberries.

  4. Bake at 400 degrees Fahrenheit for 18 minutes.
