Flourless Blueberry Oat Muffins
Ingredients
- 2 ripe bananas
- 1 cup Greek yogurt
- 2 eggs
- 1/3 cup maple syrup
- 2 tbsp olive oil
- 2 cups oats (gluten-free)
- 1/2 tsp baking soda
- 1.5 tsp baking powder
- sprinkle of sea salt
- blueberries
Preparation
Combine all ingredients except blueberries in a blender.
Evenly divide the mixture into a greased muffin tin.
Top with blueberries.
Bake at 400 degrees Fahrenheit for 18 minutes.
