No-Bake Oat Cookies

Ingredients

  • 1/2 cup butter
  • 1 cup sugar
  • 1/2 cup full-fat milk
  • 1/4 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/2 cup pistachio cream (smooth or chunky)
  • 1 teaspoon ground cardamom
  • 2 1/2 cups oats
  • 1/2 cup raisins
  • 1/2 cup chopped dried apricots
  • 1/2 cup chopped dried figs
  • 1/2 cup pistachios

Preparation

  1. Prepare a large baking sheet and line it with parchment paper.

  2. In a saucepan, combine butter, sugar, milk, cocoa powder, and salt. Place over medium heat and stir with a wooden spoon until the mixture boils. Let it boil for one minute, then remove from heat.

  3. Add the pistachio cream and stir until well mixed and dissolved.

  4. Add the ground cardamom, oats, raisins, chopped dried apricots, and pistachios. Stir to combine. Add the oats gradually until the mixture is cohesive, depending on the type of oats and pistachio cream used. Let the mixture rest for a few minutes to allow the oats to absorb moisture, then add more oats if needed.

  5. Using a large spoon, scoop portions of the mixture onto the prepared baking sheet and shape into discs.

  6. Sprinkle the tops with additional raisins, chopped dried apricots, chopped dried figs, and pistachios.

  7. Leave at room temperature for about one hour to dry and set completely. This biscuit does not require baking in the oven.

  8. Store in the refrigerator and remove before serving to bring to room temperature.
