Easy Brazilian Chicken Croquettes

Ingredients

  • 2 cups water (can be chicken cooking water)
  • 1 cup milk
  • 1 tablespoon margarine
  • 1 chicken bouillon cube
  • 3 cups all-purpose flour
  • 1 medium potato, cooked with skin, then peeled and mashed (optional)
  • salt to taste

Preparation

  1. Place water, milk, margarine, chicken bouillon cube, potato (if using), and salt in a saucepan and mix until boiling

  2. Reduce heat and add flour all at once

  3. Stir until the dough is smooth and homogeneous and pulls away from the bottom of the pan

  4. Transfer to a surface, stir the dough a bit and knead until smooth

  5. Fill with your preferred filling

  6. Dip in a mixture of half water and half milk, then in breadcrumbs, and fry until golden
