Healthy Pumpkin Chia Pudding with Spiced Apples
Ingredients
- 1/3 cup chia seeds
- 1 1/3 cup almond milk
- 2 big spoonfuls almond yogurt
- 1/4 tsp pumpkin pie spice
- 1/4 tsp pumpkin puree
- 1/4 tsp turmeric
- 2 scoops protein powder (optional)
Apple topping
- 1 apple
- 1/4 tsp pumpkin pie spice
- a touch of coconut oil
Preparation
Cut the apple into mini slices.
Combine all chia pudding ingredients together and let them sit as the chia seeds absorb the liquid.
Sauté the apple slices in coconut oil and pumpkin pie spice.
Add the chia pudding to the pots, then add the sautéed apple, and top with extra plant yogurt, cinnamon, and star anise if desired.
