Lemon Blueberry Overnight Oats
Ingredients
Lemon overnight oats
- 1/2 cup rolled oats
- 1 tbsp ground flax seed
- 1/4 tsp cinnamon
- Zest of half a small lemon
- Pinch of salt
- 1/2 cup unsweetened almond milk
- 1 mashed banana
Lemon blueberry sauce
- 1/2 cup frozen blueberries
- Pinch of cornstarch
- Juice of half a lemon
- 1 tsp maple syrup
- Pinch of salt
Preparation
In a Tupperware container, combine rolled oats, salt, ground flax seed, cinnamon, lemon zest, and unsweetened almond milk. Stir well, seal, and refrigerate overnight.
Before eating, mix in the mashed banana. Add a splash of milk if you prefer a creamier consistency.
For the blueberry sauce, heat frozen blueberries in a saucepan over medium heat for about 3 minutes to release juices.
Add a pinch of cornstarch, maple syrup, and salt, then cook for 2 to 3 more minutes.
Remove from heat, stir in lemon juice and lemon zest, and let the sauce thicken as it cools.
Serve the overnight oats topped with the blueberry sauce and additional fruit if desired. Optionally, sprinkle extra lemon zest on top for added flavor.
