Moist and Zesty Lemon Cake

Ingredients

  • 3 eggs
  • 1 cup granulated sugar
  • 1 cup milk
  • 1 cup vegetable oil
  • 1 packet vanilla
  • 1 packet baking powder
  • 2 lemons
  • a little more than 1.5 cups flour

Toppings

  • prepared white chocolate sauce
  • slivered almonds

Preparation

  1. Whip the eggs and sugar until the color lightens.

  2. Add the vegetable oil and milk, and mix well.

  3. Add the flour, baking powder, and vanilla, and mix until the flour is just incorporated.

  4. Grate the zest from the lemons, making sure not to include the white part. Squeeze the juice from the lemons and add both the zest and juice to the batter, then mix.

  5. Pour the batter into a greased cake mold. Bake in a preheated oven at 175°C with top and bottom heat, and bake carefully until done.

Tips

  1. For decoration, use prepared white chocolate sauce and slivered almonds, which pair well with lemon cake.
