Nutritious Breakfast Cookies with Oats and Fruits

Ingredients

  • 2 Tbsp chia seeds with 5 Tbsp water
  • 1 medium mashed banana
  • 1/2 cup almond or peanut butter
  • 1 tsp vanilla bean paste or pure extract
  • 2 tbsp melted coconut oil
  • 3 tbsp maple syrup
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1.5 cups whole grain oats
  • 1 cup almond meal
  • Pinch of sea salt
  • 3 Tbsp roughly chopped nuts
  • 1/2 cup sulphur-free dried fruit

Preparation

  1. Preheat oven to 180 degrees.

  2. Combine chia mix, mashed banana, nut butter, vanilla, melted coconut oil, maple syrup, baking powder, baking soda, and salt. Mix well.

  3. Add oats and almond meal, stir to make batter sticky. Then add nuts and dried fruit.

  4. Place in the freezer for 5 minutes.

  5. Line a tray with baking paper. Using a soup spoon, spoon mixture onto tray to make about 12 cookies. Press down lightly on each.

  6. Bake for about 25 minutes or until golden on both top and bottom. Check halfway through and rotate if necessary, being careful not to burn.

  7. Rest for 5 minutes and serve warm.
