Indonesian Spiced Fried Chicken

Ingredients

  • 500 g chicken, cut into small pieces
  • Cooking oil for frying

Marinade

  • 1 tablespoon lime juice
  • 2 cloves garlic, finely chopped
  • 1 teaspoon curry powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper powder

Coating

  • 2 heaping tablespoons rice flour

Aromatics

  • 10 shallots, sliced
  • 5 cloves garlic, sliced
  • 3 kaffir lime leaves, finely sliced
  • 3 lemongrass stalks, white part only, sliced diagonally
  • 2 teaspoons sugar
  • 3 red chilies, sliced diagonally
  • 2 green chilies, sliced diagonally
  • Bird's eye chilies to taste (optional)

Preparation

  1. Marinate the chicken with the marinade and let it sit for about 30 minutes.

  2. Add rice flour and mix well.

  3. Heat a generous amount of oil.

  4. Fry the chicken all at once until half cooked.

  5. Add the sliced spices except the chilies and cook for about 3 minutes.

  6. Add sugar and mix well.

  7. Add the chilies.

  8. Continue cooking until the chicken is golden brown and the spices are dry.

  9. Remove from heat and strain the oil.

  10. Serve.
