Indonesian Spiced Fried Chicken
Ingredients
- 500 g chicken, cut into small pieces
- Cooking oil for frying
Marinade
- 1 tablespoon lime juice
- 2 cloves garlic, finely chopped
- 1 teaspoon curry powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper powder
Coating
- 2 heaping tablespoons rice flour
Aromatics
- 10 shallots, sliced
- 5 cloves garlic, sliced
- 3 kaffir lime leaves, finely sliced
- 3 lemongrass stalks, white part only, sliced diagonally
- 2 teaspoons sugar
- 3 red chilies, sliced diagonally
- 2 green chilies, sliced diagonally
- Bird's eye chilies to taste (optional)
Preparation
Marinate the chicken with the marinade and let it sit for about 30 minutes.
Add rice flour and mix well.
Heat a generous amount of oil.
Fry the chicken all at once until half cooked.
Add the sliced spices except the chilies and cook for about 3 minutes.
Add sugar and mix well.
Add the chilies.
Continue cooking until the chicken is golden brown and the spices are dry.
Remove from heat and strain the oil.
Serve.
