Malaysian Style Spiced Fried Chicken
Ingredients
- 1 whole chicken, cut into 16 pieces (cut smaller if desired)
- 3 inches ginger
- 3 cloves garlic
- 8 stalks lemongrass
- 3 tablespoons fennel seeds
- 3 tablespoons coriander seeds
- 2 tablespoons cornstarch
- 1 egg
- Salt to taste
- Chili powder to taste, plus a little chicken curry powder
- Curry leaves to taste
- 1 piece palm sugar or granulated sugar
Preparation
Blend all ingredients except the chicken and curry leaves until smooth.
Mix the blended mixture with the chicken and marinate for 3 hours. For better taste, marinate overnight.
Fry until crispy over medium heat. Covering the pan during frying helps the chicken cook faster. When almost crispy, add the curry leaves.
Once done, remove and drain. Fry the remaining marinade until crispy and sprinkle it over the served chicken.
