Picadillo with Green Salsa

Ingredients

  • 500g ground beef (95/5)
  • 2 medium potatoes, peeled and diced
  • 1/2 onion, finely chopped
  • Salt, pepper, and garlic powder to taste

Salsa

  • 5 tomatillos, halved
  • 1 jalapeno pepper, halved and seeded
  • 1/2 onion
  • Handful of cilantro
  • 1/4 cup water
  • Consomé to taste

Preparation

  1. Heat a little oil in a skillet and add tomatillos, jalapeno pepper, and onion; cook until well done, then transfer to a blender.

  2. Add water to the skillet, scrape the bottom thoroughly, and add the liquid to the blender.

  3. Add consomé and cilantro to the blender and blend until smooth.

  4. In another skillet, heat a little oil and add the onion; sauté until softened.

  5. Add the ground beef with salt and pepper, and break it up well.

  6. When the beef begins to brown, add the potatoes and garlic powder.

  7. Add the prepared sauce and simmer until the potatoes are cooked.
